I also highly recommend investing in professional-grade baking chocolate and powdered vanilla (it’s more affordable than vanilla beans!).

Here are the key ingredients used in the course:

✅ Wholegrain Barley Flour
✅ Lupin or Coconut Flour (these are interchangeable)
✅ Coconut Sugar
Gluten:
I use low-gluten flours (wholegrain einkorn and barley) but they do contain some gluten.
If someone in your family has celiac disease, these recipes won’t be suitable.
However, if you simply want to reduce gluten at home, this pack is perfect for you.
Dairy:
All five recipes use butter. Butter contains only about 0.82% lactose, which is minimal —
but still enough to trigger an allergy for someone who’s highly sensitive.
You can substitute with a vegan butter, but since compositions vary a lot by brand, I can’t guarantee the exact same result.
The muffins also contain milk.
Eggs:
Out of the five recipes, only the shortbread cookies (both vanilla and cocoa-hazelnut) are egg-free.
For the cookies, muffins, and brownies, eggs are essential — there’s no alternative that reproduces the same texture without adding sugar.
